Raspberry caves

You can be sure your grandmother would have offered you
this treat when you came to visit. It tastes like childhood,
summer break, lemonade, and blueish hair.

Makes 22

 

7 oz (200g) butter, room temperature

½ cup sugar

2 tsp. vanilla extract

2 cups all-purpose flour

1 tsp. baking powder

About ¼ cup raspberry jam

 
  1. Set your oven to 350°F.

  2. Mix butter and sugar in a large mixing bowl until smooth. Add the vanilla extract. 

  3. Mix baking powder and flour separately, then add it to the butter mixture. Work into a dough.

  4. Shape the dough into a long roll, about 9” long, and cut into 22 pieces.

  5. Roll each piece into a ball and put them in mini muffin cups.

  6. With your thumb, push a little “cave” into each ball and put about a teaspoon of jam in each.

  7. Bake in the oven for about 18 minutes.

  8. Let them cool before enjoying!
