You can be sure your grandmother would have offered you
this treat when you came to visit. It tastes like childhood,
summer break, lemonade, and blueish hair.
Difficulty level: You got this one
7 oz (200g) butter, room temperature
½ cup sugar
2 tsp. vanilla extract
2 cups all-purpose flour
1 tsp. baking powder
About ¼ cup raspberry jam
Set your oven to 350°F.
Mix butter and sugar in a large mixing bowl until smooth. Add the vanilla extract.
Mix baking powder and flour separately, then add it to the butter mixture. Work into a dough.
Shape the dough into a long roll, about 9” long, and cut into 22 pieces.
Roll each piece into a ball and put them in mini muffin cups.
With your thumb, push a little “cave” into each ball and put about a teaspoon of jam in each.
Bake in the oven for about 18 minutes.
Let them cool before enjoying!
